Yes you can sync calendar colors between Google and iOS. You must sync your Google Calendar using CalDAV instead of Exchange. Here's the trick:

1. Navigate to Settings -> Mail, Contacts, Calendars -> Add Account -> Other

2. Choose Add CalDAV Account.

3. Enter your account information and touch Next to complete setup.

4. Open the Calendar app and event syncing will start. Colors will sync, too.
